Make Ahead Stuffed Peppers!

Today is a make-ahead recipe that works great for meal prep. I prepped this on my day off and baked it during the week for an easy dinner. Alrighty! So first things first, if you want less clean-up, I highly recommend getting disposable oven foil pans at Costco because I only had to put the silverware and serving utensils in the dishwasher last night.

Make Ahead Stuffed Peppers

Ingredients

  • 1 pound Ground Meat (I used beef)
  • 1/2 chopped Onion
  • Pasta Sauce
  • Mozzarella and Parmesan Cheese (I didn’t have shredded so I used mozzarella slices and grated Parmesan)
  • Italian Seasoning, Black Pepper, Garlic Powder and Parsley

Directions

1) Brown and season ground meat and onions in a pan. Cut and de-seed peppers, place them flesh side up in casserole pan. Drizzle olive oil on peppers

2) Drain grease from meat and onions. Fill the cavity of peppers. Top with cheese and parsley.

3) Cover with foil with oven directions 375°F for 25 min, increase to 425°F for 15 min or until the cheese is bubbly and meat is heated through. You can also choose to cook this as soon as you make it if you aren’t meal prepping. Just make sure the peppers are roasted and cheese is melted.

Served with Rice and Salad
