Starting A Garden From Seed For Canning Recipes

We grow a fairly big community garden plot and planters every summer around our home.

I plant vegetables from seed, such as tomatoes, peppers, cucumbers, and beets.

Earlier this year, I purchased grow lights from Amazon for $120 and have tonnes of seedlings ready to plant in our summer garden.

Essential Canning Tools For Beginners

Canning recipes are a fantastic way to grow and preserve food for your family.

If you’re new to homestead life, you may need to stock up on canning essential tools.

Ideally, purchasing a canning starter kit is ideal if you start from scratch.

The starter kit costs less than if you bought each item separately.

If you’re in a hurry, go to Amazon and purchase this canning starter kit that can hold up to 7 jars.

The handle is foldable for easy storage, allowing you to raise and support the edge of jars for quick loading and unloading.

Individual Canning Tools To Purchase

However, if you already have canning tools, you might not need to buy a full canning kit.

Watch garage sales and second-hand shops to score cheap canning tools.

We always see canning tools on the shelves, although we’ve never seen a starter kit.

That means you’ll collect tools a bit at a time but for the best possible price.

Canning Tip: You can reuse mason jars but must replace the seals and only use them once. Don’t risk your food going bad. Once the lid pops, they are popped!

Easiest Foods For Canning

Not all foods can be canned, which is why it’s essential to do some research.

I’m fairly new to canning as I go through recipes, I think my family will like it.

Generally, some meats, dairy, flour-based foods, low-acid vegetables, mashed vegetables, pasta, and fruits such as bananas, avocados, and coconut milk are not good for canning.

Vegetables
ie. broccoli, brussel sprouts, cabbage, cauliflower, eggplant, lettuce, olives, squash, artichokes.
WHY: These vegetables are considered low-acid, so you would assume pressure canning processing. However, the processing period and high pressure would result in mushy, bland vegetables …
SAFE ALTERNATIVE: Blanch and freeze, ready to add when heating jars of soup, or see if they are okay to pickle like these: brussel sprouts, cabbage, cauliflower, olives. You can also make sauerkraut with the cabbage!

However, when canning any of the above, they can safely be stored in a refrigerator instead of a pantry.

For example, one of my favourite canning recipes is basil pesto, although I store it in the refrigerator or freezer.

How Long Do Canned Goods Last?

I always try to make enough canned goods that will last us for one year, maybe two.

Although if preserved correctly, canning recipes can last indefinitely; it’s best to consume foods within two years.

Always store canning recipes in a clean, cool, dark room, such as a cold room or an area inside your home.

Never store canning jars near a furnace, pipes, attic, heat sources, or direct sunlight, as the quality of the product will diminish.

Canning Keeps Traditions Alive

Both Mrs. CBB and I can remember when our grandmothers used canning as a way to save money.

Our mothers both canned preserves like cherry, raspberry, and apple sauce.

Mrs. CBB’s father was a master gardener who learned canning recipes from his parents in Europe.

Some of the favourite canning recipes she remembers are still a big part of her heritage.

  • Crushed garden tomatoes and fresh basil with garlic.
  • Can and squish green olives in olive oil, salt, vinegar, and sweet red pepper.
  • He preserved peaches, pears, plums, and cherries.
  • Pickled wild asparagus (he would forage the asparagus every June.)
  • Marinated and preserved eggplant.

Although we don’t have as big of a garden, we carry on some of the traditions with our son.

Allowing him to help us with our summer garden by digging, planting, weeding, and picking produce, he learns where food comes from.

Some may argue that buying preserves at the grocery store is cheaper.

However, nothing pre-made will beat the taste of homemade canning recipes.
