5.5±0.2 kg of vegetable and chicken pasta

Ingredients

  1. 3 Chicken breasts
  2. 3 boxes of Long pasta (spaghetti and/or linguini)
  3. “1 box each” of an assortment of vegetables (Spinach, mushrooms, baby carrots, zuchini, green & orange & yellow capsicum, asparagus)
  4. Butter
  5. Garlic
  6. Olive Oil
  7. Green Onions
  8. Fancy-looking Fresh Mozzarella Balls (1 box)
  9. Not-so-fancy-looking Ricotta Cheese (1 box)
  10. Spices: Oregano, Chilli powder, Garam Masala, Jeera Powder, Coriander powder, Pepper)
  11. Ginger-garlic paste
  12. Garlic powder
  13. 2 bulbs of garlic

Preparing the Chicken

  1. Preheat the oven to 420°F.
  2. Dice the chicken into 1 inch cubes.
  3. Make a paste with 2 tbsp olive oil, 1.5 tbsp ginger-garlic paste and 1 tsp of coriander powder, jeera powder.
  4. Add 1/2 tbsp of garam masala, 1 tbsp of red chilli powder, 1 tsp of black pepper, and 1 tsp of salt, 2 tsp garlic powder.
  5. Mix the chicken and spice mix and keep aside. Ideally leave it in the fridge for 2 hours, but we didn’t do that.
  6. Dice ‘half a stick’ of butter and place on the chicken.
  7. Pop it in the oven for 18 minutes.
  8. After 18 minutes, if chicken is cooked through, remove and keep it aside.

Preparing the Vegetables

  1. Dice the green onions and use a garlic press to make garlic mush.
  2. Cut the vegetables to sizes you’d want to eat them. Slice carrots.
  3. Put 5 tbsp of olive oil and ‘half a stick’ of butter in a very large pan.
  4. When the butter melts add the green onion and garlic. Simmer until fragrant.
  5. Add the asparagus and mix.
  6. After 45 seconds add the zucchini and mix.
  7. After 45 seconds add the bell peppers and mix.
  8. Add the mushrooms and mix.
  9. Add the spinach (3.5 handfuls?) and mix.
  10. Mix and cover the pan for 1.5 minutes. Repeat until volume is halved or mushrooms are cooked.
  11. In a separate pan, add 2 tbsp of brown sugar, 2 tbsp of butter, and 4 tbsp of water. Once this boils, add the carrot slices.
  12. Mix frequently. Simmer for 12 minutes while covered or until water evaporates.
  13. Mix the carrots with the other vegetables.

Preparing the Pasta

  1. Cook 3 boxes of pasta. We did 2 boxes of spaghetti and 1 box of linguini.

Assembly

  1. Add 1 box of Mozzarella balls. Add 1 box of Ricotta cheese.
  2. Add salt and pepper to taste.
  3. Mix everything in a large pot. You will have a forearm pump once completed.
  4. Weigh it.
  5. It is 5.5±0.2 kg of vegetables and chicken pasta. Weighing scale below is in lbs.
