Ingredients:

  • 2 lbs of asparagus
  • 4 tablespoons of butter (divided and more to grease the casserole dish)
  • 2 and 1/2 tablespoons of all-purpose flour
  • 2 cups of half and half (equal part of milk and heavy cream)
  • 2 teaspoons of garlic salt
  • 1/4 teaspoon of black pepper
  • 1 cup of parmesan cheese (divided)
  • 1/2 cup of Panko breadcrumbs

Instructions:

Step 1:

Preheat the oven to 400 degrees F with the rack in the center.

Step 2:

The ends of the asparagus are fibrous, so remove the end from each spear by snapping them. Asparagus naturally breaks where the rough portion ends. Spread butter to a 9 by 13 casserole dish using a silicone brush.

Step 3:

Arrange the asparagus in the dish. Pack it down to have a flat and even surface, then set it aside.

Step 4:

Place a saucepan over medium heat, add three tablespoons of butter and let it melt. Once melted, add 2 and 1/2 tablespoons of flour. Whisk continuously for about 3 minutes or until it’s just barely changing color.

Step 5:

Whisk in 2 cups of half and half to the mixture. While continuously mixing, season the sauce with two teaspoons of garlic salt and a quarter teaspoon of ground black pepper. Continue whisking until the sauce is just starting to thicken. After that, take it off of the heat.

Step 6:

Sprinkle in half a cup of parmesan cheese and mix until it’s melted and well incorporated. The consistency should be rich, creamy, and cheesy.

Step 7:

Pour the sauce evenly over the asparagus. Leave about an inch of space on the long sides of the casserole dish. Bake the asparagus uncovered at 400 degrees F for about 15 to 18 minutes depending on its thickness or until it reaches desired doneness.

Step 8:

In a bowl, melt 1 tablespoon of butter, then mix in half a cup of breadcrumbs. Next, add half a cup of the remaining parmesan cheese. Halfway through baking, remove the asparagus from the oven and sprinkle the breadcrumb topping evenly over the casserole. Return it to the oven and finish baking.

When the asparagus reached your desired doneness, set the oven to broil on high heat. Broil for another 2 to 3 minutes or until the breadcrumbs are crisp and golden.
