I love a quick asparagus recipe. This roasted asparagus with garlic has been served in our home multiple times and even my kids enjoy it. It may be surprising but this easy asparagus recipe works. It’s always hard to get children to eat their veggies so this garlic asparagus is something worth trying!
Garlic Roasted Asparagus
Ingredients for the Roasted Asparagus Recipe:
- 2 pounds of asparagus stalks (tough ends trimmed, rinsed, and patted dry)
- 3 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons minced garlic
- Salt and pepper to taste
- 2 teaspoons fresh lemon juice
- cherry tomatoes
Step 1
Preheat the oven to 425 degrees F. Wash the asparagus stalks and bend them gently at a natural point. When it snaps, discard the end pieces.
Step 2
In a large bowl, place the asparagus stalks together with cherry tomatoes. Toss with extra-virgin olive oil, minced garlic, and 2 tsps of fresh lemon juice, coating all pieces.
Step 3
Place them on a baking pan, season with salt and pepper, then roast in a preheated oven at 400°F for 12 minutes or until cooked to your desire.
