What Is Panko? 

Panko is a type of breading that originated in Japanese cuisine. When translated directly, the word means bread flour, which is exactly what it is! To elaborate, panko is made out of a type of white bread made without crust and baked with a special electrical current. The loaf is then dried and turned into small flakes that are used as breading. 

What’s the Difference Between Panko and Regular Breadcrumbs? 

Most pre-made breadcrumbs are nearly identical to the kind you can make at home by drying and crumbling bread. However, unlike regular breadcrumbs, panko is nearly impossible to replicate at home, because it is made with a specific type of bread that can be pulverized into a light crispy flake instead of a heavier crumb.

  • Blanched Almond Flour – This forms the base of the panko, helping create the airy texture we’re looking to achieve while adding a boost of healthy omega fats. 
  • Flax Meal – Included for an extra satisfying crunch. 
  • Spices – Garlic powder, onion, powder, salt, pepper, smoked paprika, and dried oregano combine to create a savory flavor with just a hint of spice. 

How to Store

You’ll want to keep a batch of these gluten-free breadcrumbs on hand! 

Once combined, they can be transferred to an airtight container, jar, or sealable bag and stored at room temperature for up to 3 months

Ingredients

  • 1 ½ to 1 ¾ cups (160 g) blanched almond flour
  • ¼ cup flax meal
  • 1 to 1 ½ teaspoons garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • Optional – ½ teaspoon smoked paprika
  • Optional – ½ to 1 teaspoon dried oregano

Instructions

  1. Combine all ingredients in a mixing bowl.
