This perfect baked asparagus accompaniment will go with any meat roast. Or if you're vegetarian something like my festive nut roast.

It'll go well with your Christmas or Thanksgiving dinner too. The great thing being the minimum effort to make it.

Roasting the asparagus spears really does being out the best flavour of your fresh asparagus.

There's no need to boil, grill or sauté your asparagus either before it's roasted.

Everything for this simple recipe goes into the same roasting tin. Those delicious asparagus spears will be ready for serving with your main dish in just 15 minutes!

The balsamic glaze makes the asparagus taste sweet and tangy.

Whilst the addition of the pine nuts give this simple side dish a lovely light crunch to it too.

You could of course leave out the pine nuts if you want to. But please don't leave out the balsamic!

  • Fresh Asparagus Spears
  • Olive Oil
  • Balsamic Vinegar
  • Pine Nuts
  • Freshly Ground Salt And Black Pepper

How To Cut Asparagus

  1. Snap off the woody end of one of the asparagus spears.
  2. Line up the snapped spear with the rest of the spears and cut off their ends with a sharp knife.

How To Make Roasted Balsamic Asparagus

Steps 1 & 2

  • Preheat oven to 180C Fan.
  • Place asparagus into a large roasting tin in a single layer.

Step 3

  • Drizzle a little olive oil and balsamic vinegar over.

Step 4

  • Scatter the pine nuts over the top and season.

Step 5

  • Bake in oven for about 15 minutes, turning once, until asparagus are cooked, and pine nuts are golden.

Step 6

  • Serve as a side.

Substitutions

  • Fresh Asparagus Spears - these are the star of the show but green beans or broccoli would also work.
  • Olive Oil - a basic cooking olive oil is fine here.
  • Balsamic Vinegar - use a good quality balsamic vinegar. Not a cheap one.
  • Pine Nuts - you could also use cashew nuts.
  • Freshly Ground Salt And Black Pepper

  • 300 g Asparagus Spears
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon pine nuts
