Pan Fried Chicken & Mushrooms w/ Cauliflower Mash

Surprisingly, the cauli mash turned out really well. It was thick and fluffy when I was expecting it to be more runny and bumpy textured. The mushrooms were a hit and the chicken wasn’t bad, either– just not very memorable.

Ingredients You’ll Need

  • 1 medium head of cauliflower, chopped
  • 2 garlic cloves
  • 1 teaspoon ghee (we used Earth Balance Original)
  • 1/2 teaspoon sea salt
  • 1 tablespoon neutral-flavored oil (we used EVOO)
  • 8 chicken thighs
  • 2 lbs. mushrooms
  • 1 cup chicken stock
  • 1 tablespoon fresh thyme leaves
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper

Meatballs kind of weird me out sometimes but, these weren’t too smushy at all. They stuck together nicely and had that traditional Italian seasoning flavor. The sauce is what needed a little work; there wasn’t enough of it and the only thing I could taste was tomato. The diced up veggies were awesome, though.

Ingredients You’ll Need

  • 260g (9.2oz) of uncooked spaghetti

For the sauce

  • 480ml (2 cups) of crushed tomatoes (or passata)
  • 360ml (1.5 cups) of beef stock
  • 2 tablespoon of tomato paste
  • splash of balsamic vinegar
  • 1 onion, finely chopped
  • 1 large carrot, finely chopped
  • 1 zucchini (courgette), finely chopped
  • 2-3 cloves of garlic, minced
  • 2 teaspoons of mixed herbs
  •  1 tbs of sukrin (we used regular sugar)
  • salt and black pepper
  • spray oil

For the meatballs

  • 400g (14oz) of extra lean ground beef
  • 1 tsp of Worcestershire sauce
  • fresh chopped parsley
  • 1/2 tsp of onion powder
  • 1/2 tsp of garlic powder
  • 1 egg beaten, to bind
  • salt and black pepper

Another simple kielbasa sheet pan because I am obsessed. There is no way you can go wrong with one of these recipes, they always turn out delicious and there are so many different veggies you can swap in and out.

Ingredients You’ll Need

  • 1 pound baby red potatoes, halved or quartered
  • 2 cups petite baby carrots
  • Asparagus, 1 bunch
  • 1/2 large yellow onion, thinly sliced
  • 1 package (13 ounces) pork kielbasa, sliced into rounds
  • 1 tablespoon minced garlic
  • 1/4 cup olive oil separated
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • Salt and cracked pepper

*Note: We always use Pink Himalayan Salt and a Black Peppercorn Grinder.
