Salmon and Roasted Potatoes

Dinner tonight was really good.

4 salmon fillets, roasted potatoes with broccoli & asparagus.

The basis of the recipe was:

The herb sauce was dill, parsley, lemon juice and zest along with olive oil. I didn’t quite add enough oil and my mouth puckered too much.

I added an extra 7 minutes for vegetables too, but overall quite excellent.

As I am England at this moment in time, the salmon was from Scotland and it has a mild flavour, but was perfect.

The cherry tomatoes were incredible- odd thing to say but they were!
