I could eat steak every dinner and wouldn’t get tired of them, especially this sheet pan steak and potatoes recipe from SAM THE COOKING GUY on Youtube. This recipe is one of my-go whenever I’m carving for some steak. It’s super easy to put together, and the homemade compound butter makes everything perfect. Ingredients:
- 2 ribeye steaks, an inch thick (or whatever steak you like)
- 1/3 cup olive oil, plus extra for steaks
- 3 garlic cloves, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp smoked paprika
- kosher salt & fresh ground pepper
- 1 1/2 lb baby potatoes
- 1 lb small tomatoes (vine-ripe or cherry)
- 1 lb fresh asparagus, tough ends cut off
- 1/2 large onion, any color, cut into 3/4-inch half rounds
- 1/2 cup soy/garlic compound butter
Soy/Garlic Compound Butter:
- 1/2 stick butter
- 1 tbsp minced garlic
- 1 tbsp soy paste or 1 1/2 tbsp soy sauce
- a pinch of salt and pepper
Directions:
Step 1
Preheat your oven to 375 degrees F. Next, make the compound butter. In a small bowl, combine 1/2 stick of butter, 1 tbsp minced garlic, a pinch of salt and pepper, and 1 tbsp soy paste. Mix well, put it on a cling wrap, then place it in the freezer. Next, in a mixing jug, combine 3 cloves of minced garlic, 1/3 cup olive oil, a pinch of salt, 1 tsp dried rosemary, 1 tsp dried thyme, a bunch of ground black pepper, and 1/2 tsp smoked paprika. Mix well and drizzle it on top of the potatoes and toss them (leave some oil mixture for the remaining veggies). Now, put the potatoes face down and place them in the preheated oven for 15 minutes.
Step 2
After 15 minutes, remove the potatoes from the oven. Next, drizzle some oil mixture on the halved tomatoes, asparagus, and onions, then scatter them on the sheet pan. Season the steak cuts with some salt and pepper, and place them on the sheet pan with the veggies. Lastly, divide the compound butter into four pieces and place one on each steak. Place the sheet pan back in the oven, put it on broil, and set it for four minutes. After four minutes, remove the sheet pan, turn the steaks over, place the remaining compound butter, and broil for another four minutes.
