- 1 package Smithfield Steakhouse Mushroom Flavored Pork (cut into one inch slices)
- 3 tablespoon olive oil (divided)
- Salt and pepper
- 1/2 pound Brussels sprouts (quartered)
- 2 sweet potatoes (cut into 1 inch cubes)
- 1/2 pound baby red potatoes (quartered)
- 1/4 cup dijon mustard
- 1/3 cup maple syrup
- 1 tbsp apple cider vinegar
- In a large skillet add 1 tablespoon olive oil and add the sliced pork and cook until no longer pink. Remove and set aside on a plate.
- Add 2 tbsp olive oil. Add Brussels sprouts, sweet potato and baby potatoes. Saut until almost fork tender.
