When I was a kid we had sloppy joes for dinner every couple of weeks. They were just such a classic dinner and so easy to feed a large crowd. Now I never think to make them, but when I do everyone loves them and we all want them again soon!
This casserole takes my favorite homemade sloppy joes I grew up with and turns it into a casserole, so no buns required!

How To Make Sloppy Joe Casserole

- Start by browning the ground beef and onion together until it is cooked through and the onions are soft. Drain away any of the grease that is in the skillet.
- Add the tomato sauce, ketchup, mustard, Worcestershire sauce, sugar, salt and pepper and simmer for 5-6 minutes, until all the flavors start to blend together. Taste and adjust the seasonings if desired.
- Mix together the cornbread mix, milk, and egg in a bowl until well blended. Add the cheese and mix to combine.
- You can either use the skillet you browned the meat in (if it is oven safe) or an 8 inch square baking dish. Pour the cornbread mixture over the sloppy joe and bake for 15-20 minutes until the cornbread is cooked through and golden brown.
- Remove from the oven and serve.
Yes, you absolutely can, but you just need to double the recipe. There is not enough meat or cornbread to fill a full casserole dish, so if you make it as written use an 8 inch baking dish.
This is one of those recipes that are great leftover. Just store in an airtight container for 4-5 days. Reheat in the microwave, or if you have a large portion, you can reheat in the oven until it is warmed through.
No, you definitely do not have to. You can use another cornbread mix that you like, or you can even use homemade. I love my homemade Cornbread Recipe for this, I just cut it in half or it would be way too thick for the amount of meat called for.

Ingredients
- 1 1/2 pound lean ground beef
- 1 small onion, chopped
- 8 oz tomato sauce
- 1/4 cup ketchup
- 2 teaspoon yellow mustard
- 2 teaspoon Worcestershire sauce
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (8.5 oz) box of cornbread mix
- 1 whole large egg
- 1/3 cup milk
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 400º F. Spray an 8x8 inch baking dish with non-stick spray. Set aside.
- In a large skillet brown the ground beef and onion together until it is cooked through and the onions are soft. Drain away any of the grease that is in the skillet.
