As I said, this Sweet & Sour Pork is super easy to make. Start with a couple of pork tenderloins. Cut the pork tenderloins into bite-sized pieces. Next, chop the onion and bell pepper. Heat some oil in a large skillet, add the onion, bell pepper. Cook the veggies for about 5 minutes, until they are starting to get a little soft. Add the pork tenderloin pieces. Cook for an additional 5 minutes. Finally, add the pineapple and sauce ingredients - pineapple juice, water, corn starch, vinegar, soy sauce, and brown sugar. Bring the mixture to a quick boil and then simmer until the sauce thickens. Serve the pork and vegetables over some cooked rice.
Pork tenderloin is my favorite cut of pork. It is SO tender and delicious. It works great in this recipe. When making this Sweet & Sour Pork, make sure not to overcook the pork tenderloin. Pork is done when it reaches an internal temperature of 145F. Make sure to cook the pork in this recipe only until it starts to get brown. It will finish cooking in the sauce and taste AMAZING!
This Sweet & Sour Pork recipe is also a great way to use up any leftover pork tenderloin you might have. Cook the vegetables and then add all of the sauce ingredients. Let the vegetables and sauce simmer for 10 minutes and then add the leftover pork for the final 5 to 10 minutes. SO easy!

This Sweet & Sour Pork was a huge hit at our house. We served this over some cooked white rice. Feel free to serve this over some brown rice, riced cauliflower, or noodles.
