Twisted Asparagus Salad


Does the title of this post weird you out? I promise this is a super easy recipe that makes an healthy lunch.

The idea for this recipe sort of fell into my lap. We have an abundance of eggs from our chickens, and leftover ham in the freezer. Then while I was wandering the produce section of Meijer I came across this package of asparagus with garlic butter and a lightbulb went off in my head.

I cut asparagus into thirds, and cubed a cup of ham while the butter melted in a large sauté pan over medium heat. Then I sautéed them ham and asparagus for 8 minutes.

This can be done way ahead of time. That way it has time to cook before being mixed with the baby kale and Dijon mustard dressing.

You can also hard boil your eggs ahead of time. I prefer mine chilled. Warm salads weird me out.

Putting it together is easy. Start with a handful of baby kale. Add 1/3 of the sautéed asparagus and and ham. Dice a roasted red pepper and slice a hard-boiled egg. The final touch is honey Dijon dressing.

Even Hannah thinks this is good.
