Weekly Meal Plans 6-5-23


Orange Glazed Salmon with Rosemary

We’re finally getting sunshine and it sure brightens my attitude and fills me with happiness!  Now, if only it will last….   This week’s menu plans were difficult to make.   You might wonder why, let me tell you! 

 

It’s because I keep coming across so many recipes that are calling my name.  If I were to live to a hundred, I wouldn’t be able to try them all.  And it frustrates me!  

Did you see on the news that a man decided to go on the McDonald’s diet?  From what I can gather, he went on this diet for six months.  He’d get breakfast and cut in half – one half he’d eat the morning of, the second half, he’d eat the next morning.  For lunch, he’d get something off their menu and cut it in half.  He’d eat the other half for dinner.   Apparently, he lost a lot of weight, his blood pressure was low, and he was in good health.  I’m stymied!  I’m for losing weight and need to lose at least 20 pounds, but I love to cook and eat!  So without further ado – here are this week’s menu plans!

Tofu Tacos with Potatoes and Jalapenos

Gina, from Skinny Taste, says it best; “Tofu is a blank slate, so I love transforming it by adding different spices. Sprinkling crumbled tofu with taco seasonings and roasting it in the oven with potatoes and jalapeños flavors the tofu. Top these healthy tacos with your favorite salsa.”

I never got around to making beans with the leftover ham bone in the freezer!  But it gives me the chance to try this bean soup instead!  Jo, from Jo Cooks, says; “Packed with tender ham, aromatic vegetables, and creamy cannellini beans, this soup is easy to make and perfect for chilly days.”  Or even when it’s warm out!

Wedge Salad w/ Blue Cheese Dressing

This looks like an awesome way to cook chicken and Averie, from Averie Cooks states it best!  “The EASIEST salsa verde marinade keeps this chicken so juicy and tender!! Melted pepper Jack cheese on top takes an already awesome piece of chicken and makes it that much BETTER!!”

I just don’t think you can go wrong with coconut-crusted fish tacos, no matter how you lean.  And having made these tacos in the past, they are amazingly super good creations made by Joy from Joy the Baker!  Seriously, get cook’n!
