Hello, hello! Happy Monday! I hope you’re all checking in today after a good weekend. Today on the blog I’m diving into my monthly Week of Weeknight Meals series. This series gives you a glimpse into our weeknight dinners for one week of every month with pictures snapped in real time — no fancy schmancy food styling allowed! Last weeks meals were, as always, rather simple and focused on leftovers and, apparently, a lot of chicken. I didn’t even realize we ate chicken every single weeknight last week! I know, I know, it’s past time to let the asparagus go, but it looked pretty good, my daughter loves it, AND I was trying to come up with smooth recipes for her because she just got braces.
