Breakfast Tostadas

You can prepare everything but eggs ahead of time.  Breakfast Tostadas are not only delicious, but kicked up with spice and topped with cheese, cool crema, and creamy avocados.   This week is #BrunchWeek. Productive Day

Saturday was a very productive day.  House was partially (finishing up today) power washed, we picked up my new treadmill and put the old one by the road (which was picked up within 10 minutes by someone driving by thankfully), more zinnias planted, a few more flowers planted, and a meal was baked for our friends (just had a heart attack) and made a cold strawberry pie for them too.Peas are starting to roll in.  I have enough to saute with some asparagus, and many more on the plants.**Disclaimer – My article contains affiliate links. Not Quite So Strange Times Week 14

Slowly, slowly some things are getting back to normal. People who like buying new stuff in shops are happy, and I'm sure I saw on the news some even fighting to get in! and many queueing for hours and we're all being encouraged to go out and spend. Midwest Farmers Market Report June

This week brought back so many memories of when Otto was a newborn and I was desperate to get out of the house but we had to be careful because he was pre surgery and in heart failure. The farmers market always felt like (and was) a safe place for us to go. Every Wednesday it would take me at least an hour to pack up all of our crap (meds, clothes, feeding supplies etc) to head out and drive to Holland, MI to soak up a short walk around town before everything opened and to get to the farmers market first thing before crowds starting pouring in.We did that for the first time this summer and it was so...

courgette, aubergine & asparagus parmigiana
