Menu Monday: Hot and Cold

I made every entree on my menu plan last week and most of the side dishes too.  In the end, it proved easiest and most convenient to stick to the menu sheet rather than think up something fresh.I don't know if that will work out this week or not but we'll see.Saturday was rainy and quite cold.  I had no real meal until Friday night.  Sunday's meal was already planned. Now to figure out Monday-Friday...Saturday:  Croissants/BagelsBbq Wings, Home Fries, Carrot and Celery sticksChili.  John opted to have pasta with his.  I pulled leftover Mexican rice from the freezer to thaw and tone down the spiciness of this particular brand of chili powder for the rest of us.  I felt Caleb would...

For years I’d pored over the multitude of stories about how...

Blackened Shrimp Pasta – This pasta dish is full of succulent shrimp, punchy spices, and simple ingredients. And we’ll turn the flavor up a notch with my homemade blackened seasoning! This recipe is easy enough to serve on a busy weeknight, but it will also impress weekend dinner guests. Shrimp and pasta are a crowd-pleasing combo. Since it’s such a frequent dinner in our house, I’ve learned the real secret to success is in how you sauté the shrimp. With a bit of practice and the right technique, it’s not difficult to create tender and succulent morsels in every bite. Like my other shrimp specialties (Creamy Sun-Dried Tomato & Shrimp Pasta and Bang Bang Shrimp Pasta) this Blackened Shrimp Pasta...

Three Simple One Pan Recipes

For college students, making food at home always seems to be an arduous task. There’s also usually some form of justification to get out of cooking like too much school work, stress, too little time or seemingly being too exhausted. On top of this, the young adult population seems to not have had as much experience cooking  growing up and are trying to put the pieces together now. Specifically for Gen Z, approximately 45 percent said they don’t know how to cook many foods, but 71 percent said they’d like to learn how to cook more, according to a 2018 report from The Hartman Group.  We’re expected to be able to make healthy meals, which usually take a good portion...
