This fun and colorful baby potato salad is inspired by the sun-baked shores of the Mediterranean with chickpeas, olives, tomatoes and a tangy harissa olive oil vinaigrette instead of mayo. It’s veggie packed and comes together in just 25 minutes! This baby potato salad is inspired by the sun kissed shores of the Mediterranean and is delicious all year round! When I say I love potatoes, I mean it. I love creamy mashed potatoes. I love roasted potatoes. I love a baked potato (try the ones in Good For Your Gut cookbook!) and I DEFINITELY love a really good potato salad whether it’s my creamy avocado ranch potato salad or this tangy, colourful treat. Our inalienable culinary rights on the Fourth of July? Life, liberty and the pursuit of joyous grilling. Who says our holiday of backyard feasting must be just another weenie roast? Grilled pork tenderloin could be a delectable centerpiece of this year’s holiday happiness. As I often do, I turn to grilling guru Steven Raichlen to guide my path. His Mojo-Marinated Pork Tenderloin is a just-right entree. Over the years, I have also experimented with various seasonings and herbs, from basil to bay leaves, to add a touch of variety to the soup. From vibrant bell peppers to savory onions, nutritious broccoli, cauliflower, Brussels sprouts, leeks, zucchini, and even eggplant, this soup...
For this Tuscan-style chicken and penne pasta dish, lots of garlic and lemon juice bring an appealing flavor personality. The chicken breasts are dredged with flour and pan-fried, then later cut into diagonal slices. Once cooked the chicken is removed from the skillet and the sauce-making begins by patiently cooking the 12 garlic cloves and 3 shallots, all thinly sliced. A pinch of dried red pepper flakes come to the sauce party, along with dry white wine and chicken broth. After cooking the penne in boiling salted water and draining, some of the cooking water is reserved for the sauce. Two cups of the sauce, along with baby arugula, Parmesan cheese, and lemon juice, are tossed with the pasta. The...
