Crispy Baked Shrimp – get all the crispiness of fried shrimp in a quick and easy healthy way. Super crunchy, ready in minutes, and delicious! I’m always on the hunt for more irresistible shrimp dinner ideas. It’s one of the most affordable shellfish options on the market, and my entire family can’t get enough. And who can blame them when they’re that tasty? I love cooking with shrimp because it cooks in a flash and is very healthy. I try to stock up on frozen shrimp when it’s on sale and always keep some in my freezer. In a pinch, I know I can always sauté a batch and serve it over a simple pasta. It’s so quick to thaw...
It was another great week in the grocery spending department. I only spent $11.99 and we made a ton of meals from scratch. We started the week with leftover beans and a loaf of homemade bread. I used the spelt flour I picked up from Maine Grains back in December to make the bread and it turned out fantastic. {If you want the recipe let me know, and I’ll post it.} There was also a homemade chocolate cake! And some Dutch oven cinnamon raisin bread. At the start of the week I set out 9 jars on the kitchen counter with plans to open and use up the contents throughout the week. Last week we emptied: 2 Jar of Beef...

I’ve used it several times and enjoy it every time I make it. We had company over for dinner back in October and I served this Cheesy Asparagus Casserole along with a Chicken Lasagna. Other friends brought a salad and a dessert. It was a great meal. While I made this with boiled asparagus, if you have a chance...

Many weedy species have also proven their usefulness as medicines and food, going back several millennia. Wildlife, too, can benefit from such plants. Yet these plants are often the focus of a ‘war on weeds’ which is unfortunate and misguided, the author of a new book on the topic argues. “Can weeds be appreciated for their critical ecological roles? Can they be managed in situations where they may become problematic?” he asks. This post is a commentary. The views expressed are those of the author, not necessarily of Mongabay. As a group of plants,...
