Here’s my big list of things I want to accomplish in 2022: Remodel The Kitchen  The electrician is planning on coming out this week to see what needs to be done so that’s a step in the right direction. Now the hard part; making sure we get all the outlets and plugs in the right spots {we’re having quite a few of them moved} and remember to do all the stuff we want done in the other rooms. Thursday 14th July 2022Focus on the good and the good gets better.Quick blog this morning as I've just realised the time, even though I've been up since 5am!  I made it through another day, finished on 1300 calories, happy with that.  enjoyed my meals.  I had scrambled eggs and tomatoes on one slice of bread for breakfast, and salmon, mini jackets with garlic butter, corn on cob and asparagus for dinner.  We also had an ice cream from the ice cream van outside but we won't be doing that again £3 each - ouch, I asked for a plain cone in a waffle and when I got inside it had a flake in which no doubt added to the cost.  I just...

Pan Fried Chicken with Sage, Garlic & Lemon

 I confess I eat a lot of chicken.  It is my protein of choice most of the time, and that is for a few reasons. One, its higher in protein and lower in fat than most other animal sources of protein. Chicken breast in particular is a great for people who are seeking to lower the fat in their diet and up their protein.Two, its incredibly versatile, mixing well with a multitude of other flavors and textures.  It also used to be cheaper than other proteins, but lately its gone up quite a bit in price.
